Making the Citrus Syrup: Put the listed components in a pan, heat until it reaches a light boil, stirring so the sugar melts. Then, remove from the stove allowing it to cool fully. Pour to a sealable bottle, cap it and store in the refrigerator, it can be stored for around four weeks.
For the Batch Mix: Mix all the liquid ingredients in a large bottle, let it rest for 60 minutes, then pass it through preferably using cheesecloth, making it perfectly clear.
When ready to serve: Pour 85ml from the batch mix to a stirring glass filled with ice, gently stirring carefully for about 60 seconds until cold. Filter to a chilled martini glass or a similar vessel, top with some cranberries and finish with a quick spritz with the mandarin essence over the drink.
